      Our objective with the La Dégust' site? Make you discover our production of top-of-the-range oysters and our other seafood products in a unique setting in the middle of the marshes that make up our oyster farming site in Ars-en-Ré, next to the port and the market. The tasting charter allows us to offer you products from our farm, but also those from other local producers on request. Come and taste our top-of-the-range oysters, our shrimps and our seafood platters around a glass of white wine in the heart of the marshes in Ars-en-Ré! The quality and freshness of the products are not the only values that drive our project. La Dégust' par Oyster DoRê is a unique tasting place which aims to make you discover exceptional local products and to allow you to experience real moments of escape in an authentic landscape while limiting its impact on the environment. Zero waste objective for La Dégust'! This results in the recycling of oyster shells, the installation of sorting bins on the site and the reduction of plastic and cardboard waste as much as possible.

      The refining in Roll Oyster of our oysters within our clear production allows us to offer you exceptional oysters of size 3 and 2 with a high flesh content and incredible taste qualities. This unique process, co-invented by François Eric, reproduces the natural conditions of the sea tide within the marsh. The oysters can thus be dewatered automatically at the desired frequency to allow them to work and produce firm and tasty flesh.

    DoRe oyster farm in Ars is a must-visit destination on Île de Ré, regardless of where you're staying. It offers an exceptional combination of delicious seafood, warm hospitality, and a picturesque setting. François, the passionate oyster farmer, welcomes guests with open arms and shares his love for the sea and his craft. His dedication to sustainable farming is evident in the quality of his oysters, which are plump, briny, and truly special. Unlike other oysters, DoRe's have a unique saltiness that's incredibly addictive. Beyond the oysters, François' culinary skills are equally impressive. His mussels and prawns are cooked to perfection and bursting with flavor. We've traveled extensively and tried many great seafood restaurants, but DoRe's was truly memorable. We even cycled 10 kilometers just to have lunch there again before our flight home. François' positive energy and infectious enthusiasm are inspiring. Despite the demanding nature of oyster farming, his eyes sparkle with joy and kindness. If you visit, I highly recommend having a chat with him; he's a truly special person. At DoRe Oyster Farm, you'll be surrounded by lush fields and the gentle breeze of the ocean. After your delicious meal, take a moment to relax and enjoy the peaceful ambiance. As we did. It gave us so much energy! Great, great place. We tried several oyster farms during our stay, but DoRe was our favorite. It's a place that will stay in my heart.

    This is the best place in the world ☺️ All food was so delicious 😋 I will back to Île de re just to visit this place again! And last but not least, the restaurant’s people are so nice!

    What a fabulous place to spend an afternoon enjoying and learning about fresh oysters. Could not recommend Francois and his wonderful establishment enough!
